Nigerian yam porridge with vegetable is a meal everyone should try out. It’s not only delicious but also very healthy.
It is prepared with a combination of yam and vegetable and it’s very delicious. Also, it is best enjoyed if the yam is very soft and the vegetable is pumpkin, better known as ugu in the eastern part of Nigerian.
Ingredients for cooking vegetable yam porridge:
- Green vegetable (ugu preferably)
- Maggi cubes
- Palm oil

Steps to cooking green vegetable yam porridge:
- Peel, dice, wash your yam and put in a pot with and leave to boil for about 15 minutes.
- Then, add the flaked fish, seasoning cubes, onion, fish, palm oil, salt and any other ingredient you will love to add. Check for salt and leave to cook.
- Frequent checking and stirring to help the sauce thicken, when it began to thicken, I checked for softness before adding the washed green vegetables. Stir and leave for another 5 minutes before serving.
This food can be eaten at any time of the day and it is best enjoyed with a cold drink.
